Nektar - Countenance (one of the best prog rock solos ever).
Enslaved - Queen of Night (Arve Isdal at his shredadelic best. Awesome soloing).
Camel - Lunar Sea (Fucking sublime)

Add on to these pretty much any of Page's or Akerfeldt's solos.
 
Jason Becker - Paganini 5th Caprice (electric studio version)
Jason Becker - Japan 1989 Yo-Yo solo, which has a variation of the Paganini 5th Caprice.

Symphony X - Church of the Machine, one of my favorites from Symphony X but every solo Michael Romeo does is amazing.
Children of Bodom - Hatebreeder, i really like this solo for some reason
Kalmah - Alteration, not very well-known band definitley worth checking out
Firewind - Feast of the Savages, an instrumental track with Gus G. playing who is in the band and there's even a guest solo by Marty Freidman amazing song also Beware the Beast by Firewind.
