Immolation and Suffocation do the genre best nowadays and are among the best of all time. Other than that, you can't go wrong with Possessed. Seven Churches obliterates most other death metal albums. A lot of the proto-death metal material is also quite good, such as Kreator's "Pleasure to Kill".

The reunited Possessed (well, whatever you want to call Jeff Becerra with Sadistic Intent, playing Possessed songs) will be playing in NYC on November 25th.
