They aren't really doom yet they are probably closest to doom than any other genre. Bands like Isis, Neurosis, Cult of Luna and to a lesser extent Oceansize have basically created a style of their own.
 
Not into Doom much, do Like Cathedral though, in particualr Forest of Equlibruim, The Eternal Mirror and, although not so doomy, Carnival Bizzare

Last Fair Deal Gone Down is not a doom album.

I'm not even going to bother with an all time favourites list because I have checked out way too many doom bands in the past few months and I still need to let it all sink in and see which ones I ultimately find the best.

I haven't familiarized myself much with Katatonia yet... I imagine their earlier albums sound much different than modern?
 
Quite. Everything up to and including Brave Murder Day is doom metal. Some of which features Mikael on vocals actually (Brave Murder Day apart from track 3, and the Sounds of Decay EP).

From Discouraged Ones on they are more melancholic rock music (though still edging on metal on some albums). For old Katatonia I'd recommend checking out Brave Murder Day and for new Katatonia I'd recommend Last Fair Deal Gone Down.
