I'm not calling anyone out who does it, I just personally have never done it and I don't see my self doing it. It makes complete sense to do it, and it really isn't that much different than doing a whole pass and then cleaning up mistakes with punch in/outs. I would probably have no problem doing it for other bands I record to save time, but for me personally I don't know if I would do it.
Also, I don't compose and record at the same time, so maybe that's another reason I haven't done it. It sounds like a good idea, just one I've never thought about doing I guess.
Plus, recording for me is my biggest "training ground" to really dig in and prepare myself to play the songs in a live setting. The dynamics are so different from stage to studio and nailing my parts in complete takes just gives me more confidence to know that from there on out, I'll be better equipped to handle the music live.
