To be honest, this is the only Amorphis CD I've really looked into. I've downloaded a few songs from their previous stuff and it's okay, but doesn't get me going. Should I be giving the previous stuff a chance to grow on me?

The Karelian Isthmus is an absolute must. It is probably one of my favorite Death Metal albums. Everything on there is just fantastic.
