Basically, joey has been using podfarm for a long time, and knows how to use it very well (obviously)....If it isn't broke don't fix it.

I agree I think he likes the frequency curve he gets and the way he is able to manipulate the tone well so he sticks with it.

I've read somewhere, that he said, that some bands had nice amps with them, but he sucked at mic'ing them up, so he sticked to POD Farm, because he was getting a lot better results. I don't know if it's true, though.

I wouldn't say he sucked at micing real amps. 'Before Their Eyes' album from 2008 was pretty good and I think that was a combo of real amps and something else. Pod Farm has a nice sound if work with it a bit eliminate the honking/hiss that comes with it.
