Fairyland and Lost Horizon are lesser known Power Metal bands you might have missed. Maybe Edguy too, although you probably have their stuff. To be honest the amount of good Power metal bands is highly limited, so after finishing all the CDs of Blind Guardian and Kamelot you'll need to start looking at other genres.

Lost Horizon is pretty well-known, and Fairyland (while good listening) is basically a combination of Rhapsody and Dark Moor (since it is founded by a Dark Moor member). You're right though: bands like Blind Guardian and Kamelot really are the best of the power metal scene. So much of it just sounds so damn similar.
