For both the Cowboys and Giants, you overlooked key coaching and system changes/adjustments. Yeah, Dallas' D is going to be in the bottom 5 unless a miracle happens, but the offense is going to probably be in the top 5. The reason Dallas will have more than 5 wins is a weak division. Neither the Redskins nor the Giants are scaring anyone (at this point). Merely splitting division games gives Dallas 3 wins, and I think they can find more than 2 in their other 10 games. Hell, even the Niners suddenly aren't so imposing with all the losses on the defensive side of the ball. Not saying that is a win, but I'm not chalking it up as an auto loss either.
Linehan will significantly help the good Dallas defense get better. The Giants on the other hand, are learning a whole new system, and none of the receivers appear comfortable yet nor moving in that direction.
The Panther WR corps was terrible last year, I would say the new corps is at least marginally better. I think they will regress but due to losses in the secondary. But how did Atlanta get appreciably better?
Yes, the coaching system is absurd and I don't see how you could deny that Romo's back plus age is a concern. Maybe nothing will happen, but nobody would be surprised if he went on IR. But heck, even if he misses a four game stretch, they're probably going 0-4 with Weeden at QB, regardless of opponent.
And really don't see how the Panther's receivers are better. Avant and Cotchery are middle of the road 3/4 guys, not starting material. I guess it depends on your opinion of Kelvin Benjamin.

I didn't believe in Wilson too much at first either, but the dude seemingly never fucks up, and seems to extend a few drives a game with his legs. His field awareness is excellent. It's not like he's had amazing WRs either. Harvin was hurt all of last year. He's much more risk averse than big arms like Cutler, Flacco, Romo, or Eli. He doesn't need take chances when the run game is great and his roster is generally stacked.
If you had talent evaluators in the NFL pick a starting QB for the next 5 years, he almost certainly goes in the top 3-5, with Rodgers, Luck, and maybe Brees being the only guys I'd place ahead of him. And that's probably without even considering his salary.
Carroll has been clear that Wilson is an excellent QB because he does specifically what he is asked to do, without making mistakes.
