If I've never listened to Iced Earth before, should I? If so, what should I get?

I don't see why not, they're a pretty good band. Probably start with Burnt Offerings, or if ye want to nosh on a little bit of all their earlier offerings, pick up Alive in Athens. I'm not too big on live outputs, but that's probably one of the best live recordings I've heard.

Havent heard any of their early shit in loooooooooong time, lets (re)discover together.

They are a truly elite band for their genre. I would recommend starting with "Dark Saga", as it where they found their sound. That said, "Burnt Offerings" is a really good disc. In retrospect, it feels as if it was when they were still finding themselves.
