Mmm, I play the piano and i had this doubt before, Im 90% shure you wont find piano sheet music.
Try to use midi software such as MïdiNotate, you can get it for free in this page: http://www.classicalarchives.com/store.html#notate

The midis files you can find them at The Edge of Forever (official website of Symphonyx)

If i'm not mistaken you can buy sheet music from Dream Theater's website (I think it's a book) but Luis is right, you won't have much look looking for sheet music. Midi files are the way to go

I actually posted a topic about this under the dream theater forum. I am a pianist/guitarist and I have anxiously wanted to purchase DT/SX sheet music for piano/synth. Unfortunately, there is none available, except for the DT full score anthology which has sub-par keyboard transcriptions. I recommend a program called Cubase which will do a good job of transcribing midi files to actual notation. Editing is required though!!!!! Hope this helped.
