For shredding, Speed Metal Symphony or Images by Cacophony totally kick the arses of any other song.
I love Becker's Paganini 5th Caprice and his 1989 Yo-Yo solo in Japan has to be the best shredding I've ever seen.

I love the solo at the end of Paradise City where Slash just goes for it. Completely unnecessary, but fantastic.

Alright guys, I finally found out. The guy who plays the december flower solo is Fredrik Johansson. Now, is he in any bands? And is that the dude who runs studio fredman?
