Opeth won't ever put covers on their album (except as bonus material, as they have said recently, and they actually have recorded a cover while recording GR). as we all know but for those few, I'd like to point this out again.
but actually, I'd prefer classics, like they did with Remember Tomorrow and Circle of the Tyrants ... I wouldn't mind something from King Diamond, or even old Black Sabbath ...
as a tribute to those bands that inspired them so much, and also to hear another approach to classic material.
the thing with "unexpected" covers is mostly that they are songs that really don't fit in with the sort of songwriting they are used to, and this you can always hear very well, no matter how much they alter it ... I'm not a fan of covering songs that are totally different to be honest.
