I'll third the Scar Symmetry recommendation and second the Bumblefoot.

Scar Symmetry's my favorite melodic death metal band currently. Christian (the singer) is a cross between Mikael Akerfeldt and Dan Swano, and the two guitarists have some pretty amazing chops as well.

Thal/Bumblefoot is quite possibly my favorite guitarist at the moment. He's certainly up there with Mattias (if not ahead of him). I had the opportunity to see him in NYC last week and he totally owns the fretboard.
