I like a good bit of Thrash and Death, but I get bored of them after awhile.
US power metal (from Lethal and Sacred Rite to Helstar and Pharaoh)
Progressive (from Zero Hour and Spiral Architect to Polaris and Cea Serin)
NWoBHM (from Angel Witch and Mythra to Gaskin and Elixir)
Thrash (from early Testament and Heathen to Merciless Death and Strikemaster)
So, anything traditional and with a certain degree of melody, basically.
I have a soft spot for metal from Canada; Canadian bands usually release excellent discs (Sacred Blade/Othyrworld, In The Name, Zions Abyss, Final Stage, Cauldron, Heavens Cry, to name a few).
Another preference would be technical thrash like WatchTower, Realm, Anacrusis, Toxik. I just love that insane stuff.
Black/death/grind and the like are not for me; Immortal's At the heart of winter, Arch enemy's Wages of sin and the Death catalogue being the few exceptions.

My favorite genres are black and death, which are often interchangeable as my top favorite because they appeal to me in different ways, but other than that, I like grindcore, old school thrash, and a small bit of power metal.
