Elvis Presley - King Creole, Frank Zappa - Willie The Pimp, The Allman Brothers - Whipping Post (Live), Stevie Ray Vaughan - Lenny, Jimi Hendrix - All Along The Watchtower, Led Zeppelin - Achilles' Last Stand, anything off of Funkadelic's Maggot Brain album, a lot of live Canned Heat tracks, a lot of Alvin Lee stuff, a lot of Yngwie stuff, a lot of George Lynch stuff, AC/DC - Whole Lotta Rosie, just to name a select few.
 
for metal it would definitely have to be the ender to this


for non metal without a doubt its the second half of this
 
I have lots of favourite solos. The one thing that appeared in my head when I read this thread title however wasn't a solo, but the Ritchie Blackmore blues intro into `Strange kind of Woman` from on their Made in Japan album ( 1972 ) It is a short , authentic and classy run of maybe 25 notes and ending in a wonderful F sharp 7 ( if I remember correctly ). Bliss, and this sort of run is very era, they cant write this sort of stuff anymore.
