The only comedian I can think of that goes the joke route is Dmitri Martin, but he's not that good. George Carlin is good, but more because he says everything left-wing atheists want to say and gets some laughs instead being yelled at.There are some good comedians out there, some of them mentioned by seedofvengeance. I'm not so sure I'd say it has "gone downhill", since I'm not sure if there was ever a time when it was that much better. Stand-up comedy hasn't been mainstream for very long, and there have been shit comedians the whole time.
I would liken it to the music industry, really. The simple, uncreative stuff sells and "dominates" the industry while, for the most part, the quality stuff stays hidden below the surface. Pop music and club rap type shit sell, metal does not. Comics who make simple observations about every day life and have good delivery sell, comics who write jokes do not.
