American comedy seems to have really gone downhill. Maybe regular jackoffs like this guy and Dane Cook are just capitalizing on the growing stupidity of the American public. ThisIsACoolName is our only hope.
 
There are some good comedians out there, some of them mentioned by seedofvengeance. I'm not so sure I'd say it has "gone downhill", since I'm not sure if there was ever a time when it was that much better. Stand-up comedy hasn't been mainstream for very long, and there have been shit comedians the whole time.

I would liken it to the music industry, really. The simple, uncreative stuff sells and "dominates" the industry while, for the most part, the quality stuff stays hidden below the surface. Pop music and club rap type shit sell, metal does not. Comics who make simple observations about every day life and have good delivery sell, comics who write jokes do not.

I've tried to sort of categorize types of stand-up comedy, and obviously the "Observations" style of comedy is one we see the most, and requires the least creativity. That is not to say that it is inherently bad or that it does not take talent- some of it is very funny- but, for the most part, it's all about the delivery and not the humor. Style over substance. Anyone can say "Hey, guys, women are really emotional and men just want sex", but it does take some talent to say that in such a way that will make people laugh. A lot- but not all- of what Gaffigan does is observational, and he's fucking awesome.

The "jokes" style comics are rather rare. Guys like Wright, Hedberg, Martin, etc... the actually write some very clever, orginal material. It's probably the hardest, not only because you have to be really fucking clever to come up with it, but it's very difficult to deliver it in a way that will entertain.

There are a lot of really good comics who do a lot of stuff about themselves. Anecdotes about their own lives, their thoughts, etc. Louis C.K., Mike Berbiglia (fuck if I can spell his name), Brian Regan, David Cross, etc. All those guys are fucking awesome.

Then there are the weird ones, which I suppose would fall more into sketch comedy or performance art. Slovin and Allen come to mind.
