How to tell bands you can't physically record drums, but program?

then mic the Overheads!

I would recommend freelancing at another studio if the band has the money / you have the knowledge to record drums / the drummer is good enough. Give them that option or programming drums and tell them that programming is cheaper. 95% of the time the band will go for the cheaper option. Fuck bands.
