For "gothic" metal:
Anathema - The silent enigma
Paradise Lost - Gothic
WTF?!? Anathema and Paradise Lost has NOTHING to do with goth metal! The record 'Gothic' doesn´t make PL goth!!! Have you ever heard of Doom???
Recommended:
Rapture - 'Songs For The Withering' and 'Silent Stage'.
Once described as the missing link between Opeth and Katatonia. IMO a perfect description!

Mercenary - 11 Dreams
If a mix between melodic power metal (like Evergrey) and thrash sounds good to you, then this is the band!

Woods Of Ypres - Pursuit Of The Sun And Allure Of The Earth
Described by the band itself as 'Summer Black Metal', it sounds as if inspired by (old) Katatonia and (old) In The Woods... among others. It´s like the black metal record Agalloch never made. The lyrics are about nature and depression and so on, so no problems with the catholicism there.
The band has its official forum here at Ultimate Metal

Volbeat - The Strength, The Sound, The Songs
Load-era Metallica meets Life Of Agony meeets Corrosion Of Conformity meets Elvis! Rock N´ Roll metal with Caputo/Hetfield-esque vocals, and an Elvis obsession... I guess you´ll just have to hear it.
