Ok, after going through Amazon and finding some CDs, I so far have these in my cart:

Edge of Sanity - CrimsonI, CrimsonII, Purgatory Afterglow
Dan Swano - Moontower
Kalmah - Swamplord
Athiest - Unquestionable Presence
Sentenced - Crimson, The Cold White Light

Opinions, is there one in there that you would drop for something else?

Once described as the missing link between Opeth and Katatonia. IMO a perfect description!

Woods Of Ypres - Pursuit Of The Sun And Allure Of The Earth
Described by the band itself as 'Summer Black Metal', it sounds as if inspired by (old) Katatonia and (old) In The Woods... among others. It´s like the black metal record Agalloch never made. The lyrics are about nature and depression and so on, so no problems with the catholicism there.

Load-era Metallica meets Life Of Agony meeets Corrosion Of Conformity meets Elvis! Rock N´ Roll metal with Caputo/Hetfield-esque vocals, and an Elvis obsession... I guess you´ll just have to hear it.

Darkthrone- Blaze In The Northern Sky
Death- Sound of Perseverence
Celtic Frost- To Mega Therion
Bathory- Blood Fire Death
Venom- Black Metal

Start there. Also, here is a short list of some other metal albums I really enjoy:

Mastodon- Leviathan
Lacuna Coil- Comalies (also be on the lookout for Karmacode, to be released in April)
Cradle of Filth- Nymphetamine
Horde- Hellig Usvart
Nightwish- Once
After Forever- Invisible Circles

I would suggest Horde- Hellig Usvart in particular, as it was an extremely controversial album when it was released. This is because it is completely black metal in its earliest style, but rather than the normal Satanic subject matter it is a Christian album.

Along this vein, I would suggest the album "Veil of Remembrance" by Crimson Moonlight. They are also Christian black metal, and they slay.
