Who would want to hear Symphony X cover an Adagio song? That would be like Symphony X covering a 2nd-rate version of themselves! Symphony X covering a band that is trying to be like Symphony X makes no sense to me!
 
I think a cover of Opeth's Bleak would be interesting. Also:

I'm a sucker for all things Pink Floyd, so I would have to suggest one of the epics such as Shine on You Crazy Diamond, my favorite Floyd song of all. I also have to agree that The Battle of Evermore and Kashmir are great Zeppelin songs that would be awesome as well.

I'm gonna second Highway Star. That song's begging for 16ths on the double kick. GOD I love that song.
