Yeah you definitely have to do it right or it's teeth-destroying levels of chewy. My family usually cooks the tail in a ground pit but my mum always did kangaroo in a stew so that's what I prefer.
I do a lot of kangaroo with different flavours and different techniques. It's not overly cheap but it's good meat. With the kind of numbers we have here even if all aussies ate them for dinner we wouldn't put a dent in the population.
