Umami is one of the 5 basic tastes. Salty, sweet, sour, bitter, and savory (or Umami). Generally, savory foods are considered to be like steak, cheeses, fish, ect.
Balancing the 5 basics is what makes great food. That's why most food is hit with a pinch of salt or a dash of lemon juice to bring out flavors. You are balancing the already present ones, such as umami, salt, ect. Usually you would use sugar if it is a sweet dish (pie filling for examply).
But in a way, its a way of describing the taste glutamates in food. Most common way we add it to our food is with MSG (monosodium glutamate).
Education is paying for itself already.
