I can do plenty of stuff on still rings (like men's gymnastics) but it's not something I practice often at all.

If it were the whole foot or hand, I'd first lose a hand, because I too would not like to give up my mobility.
But if it's just a part of it, I'd rather keep my working hands and hold the deformation to a less obvious part of my body and lose part of a foot. (assuming I'd still be able to walk, etc.)
