Exactly, a band doesn't have to blow me away with complex song structure or technical ability for me to enjoy it.

Carcass - Necroticism
Dark Tranquillity - The Gallery (If I may take the liberty of including this melodeath-gem)
Death - Leprosy
Eucharist - A Velvet Creation
Morbid Angel - Altars of Madness
Possessed - Seven Churches
Sepultura - Morbid Visions
The Chasm - Deathcult for Eternity: The Triumph
 
Personally I perfer death metal with a more brutal and 'extreme' approach to the genre, and with killer production. I'm not very fond of the typical death metal acts, and the bland NY scene in which most bands try to emulate Suffocation. Hence I prefer these albums

Panzerchrist "Roomservice"
Belphegor "Goatreich - Fleshcult"
Behemoth "Demigod"
Nile "In Their Darkened Shrines"
 
Well I agree with response #6 as to the overall champion but two great albums I've not seen mentioned yet (though I've not exactly read the thread carefully) are Mental Funeral and Close to a World Below.

Fave death metal album......it's a tough one! My top 3 in no particular order would be:

Death - Human
Disincarnate - Dreams of the Carrion Kind
Cannibal Corpse - Gallery of Suicide
