I don't listen to much stuff that's not rock or metal but I like:

George Benson (for his guitar work, not singing)
Blesside Union of Souls
Bob Dylan
Neil Young (who could be considered rock, but defies any category)
Gordon Lightfoot

None of those guys get much spins less Young ans Sade though.
