Oddly enough, I'm sort of 'out-of-the-loop' as well. I'm a '90s death metal-head that has gone mellow for years and has recently gotten back into extreme metal. Though I'll try to comment on what I know from your list.

Cannibal Corpse - Old stuff I know I don't like
Their 'new' (relatively new) vocalist is better in my opinion. I just got their new album, 'Kill' and though I've only listened to it all the way through twice, I like it so far.
I got 'Heartwork' when it came out and it's been one of my favorite death metal albums ever since - it's melodic death metal at it's best. Since then, I've gotten into their earlier stuff like 'Necrotism' and I realize that I haven't been listening to it as much as I should. It sounds (very much!) like you would get into 'Heartwork', especially if you don't like 'blast-beat' Carcass. They mellowed out alot with 'Heartwork'. Great head-bobbing to be had.
Cradle of Filth - a seemingly popular band I hear mentioned a lot. Everything I've heard from them sucks imo.
Although they're not one of the favorites around these boards, I actually like them alot. So far, I've found that I liked 'Damnation and a Day' and 'Nymphetamine' (which seemed more chunky and easily accessible for a generic metal-head like myself) but I didn't like 'Midian'. I must explain that I was never a fan of black metal in the '90s (I didn't like the bad production) so I'm a virgin black metal fan. Though, from what I hear, Cradle of Filth is actually gothic metal (?) I don't care what it is. I like Dani and his spoiled-girl-vocals. If you don't like his vocals, you probably won't like anything by them...
Dillinger Escape Plan - a seemingly popular band I hear mentioned a lot. Everything I've heard from them sucks imo.
Although they're not punk, they seem to capture its spirit, in my opinion (especially when you see them live). And though I don't like most of their songs, the songs I do like are worth the purchase of the CD and then some...and most of those good songs are off 'Miss Machine'.
I'm trying to like them, myself...and I'm wondering why I'm trying so hard...

Lamb of God - a seemingly popular band I hear mentioned a lot. Everything I've heard from them sucks imo.
Lamb of God was originally known as Burn the Priest (I'll assume you don't know since it wasn't on your list...). Burn the Priests' self-titled album is great. It's like an extra-heavy Pantera. It's actually one of my favorite CDs and it sounds nothing like Lamb of God.
Meshuggah - I like the odd tech tune now and again, but haven't found anything from them catchy enough to make me move.
Although 'Destroy, Erase, Improve' is probably more easily accessible, 'Chaosphere' is the only album of theirs I've been able to get into. In my opinion, everything they've done pales in comparison to 'Chaosphere'. Though I did like about 5 minutes of 'I' (the middle where it gets really heavy) as well - that's definately a song/album worth checking out.

I think they're great. These guys are what got me back into death metal. I heard Nile and was hooked instantly.
Opeth - a seemingly popular band I hear mentioned a lot. Everything I've heard from them sucks imo.
I was dissappointed with their latest album, 'Ghost Reveries' because too much of it was too mellow but if you like progressive metal at all, definately listen to some of their others ('Orchid', 'My Arms, Your Hearse', 'Deliverance' - those three are a bit more heavy). I haven't listened to 'Blackwater Park' yet (it is on order though) and I've only listened to 'Morningrise' a few times (though I'm not impressed so far).
Pungent Stench kicks ass! If you truly want something you can bob your head to, this is definately it. It's groovy, head-bobbing death metal. Though I haven't heard anything past 'Club Mondo Bizare', everything before that was excellent. In fact, I need to re-stock my Pungent Stench collection...

I guess I agree with you there...though there's one song on '13' that I like alot and that's 'Wormfood'. The rest of their stuff is mediocre, at best - my opinion.

No Bolt Thrower on your list? They just came out with a new album ('Those Once Loyal') and it's fanfuckingtastic. It's just as good as 'IV Crusade' or 'Warmaster', in my opinion.
You caught me at a bad time. I've got over 20 new(er) extreme metal CDs on order and they haven't gotten here yet. Oh well...
Some bands that aren't death metal but are awesome anyways (none of them nu-metal):
Mastodon - particularly the album 'Leviathan'. They have a first-rate drummer and a unique sound altogether. You should be able to find a 'Seabeast' mp3 around and it's a good song to judge them by.
Revolting Cocks - Cocked and Loaded. I don't know if you're a fan of Ministry or the Butthole Surfers (personally, I worship at the alter of Al Jourgenson almost daily) but this is an ecclectic album with Jello Biafra, Al Jourgenson from Ministry, Gibby Haynes from the Butthole Surfers, some dude from the old punk band the Skatenigs, Rick fuckin' Neilson from Cheap Trick, and Billy (I'll-be-damned-he's-a-fucking-metalhead?) Gibbons from ZZ-Top. No two songs on this CD are alike though they all kick ass.
Cathedral has a new album out ('Garden of Unearthly Delights') and though I've only heard the title track so far (that's one of the one's I've got on order), it's pretty good.
On blast-beats: if you're anything like me, you probably didn't get into black metal or technical death metal because the production sucked back in the '90s. Well apparently (and I've just found this out) most of the production of black metal and tech. death is top-notch or at least a damn-sight better than it used to be. I don't know if that helps you, I know it helped me to know that.
