"sour cream" made w/ Fage 2% Greek yogurt, mustard, sriracha, garlic powder and black pepper

Made some pasta dough

Rolled the shit

Made a filling of fresh mint, Parmesan reggiano, peas, and heavy cream. Made a bunch of tortellini.

Fast forward 3 hours. Scratch made marinara (made earlier), some spicy lamb meatballs (merguez), and shaved Montamore cheese. Really awesome but I should have started earlier and added more of the spicy lamb to the sauce to offset the sweetness of the tortellini.

I'll just pretend they don't have pease in the filling, in which case, it looks delicious.

Homemade pasta takes so fucking long. I suppose one would be able to make it faster with practice, but I don't do it often for that aforementioned reason.
 
Tonight I gave another go at St. Louis-style pizza. First I made the dough, unlike most pizza dough, this lacks yeast.

A blend of provolone, white cheddar, and swiss cheeses, mixed with a bit of liquid smoke, approximates the Provel cheese traditionally used.

To make the sauce, one needs only to combine the ingredients - no cooking required.

Here is the assembled pizza, before baking. Note the parchment paper. That made it a hell of a lot easier to slide it into the oven, without it folding over into a deformed mess.
