There are some obnoxiously spicy ones, but I enjoy thai/indian curry's that aren't spicy. It's just a bunch of random spices that's made into a stew and encapsulates the meat/rice/noodles
This thai place near me does coconut curry, and I would imagine the recipe is similiar to this (and its goooood)

2 tablespoons olive oil 1 teaspoon crushed red pepper flakes zest of 1 lemon 1 1/2 tablespoons minced garlic 1 to 1 1/2 tablespoons curry powder 1 1/4 cups light coconut milk 2 tablespoons soy sauce 2 teaspoons sugar, or to taste 1/2 teaspoon salt, or to taste 1/2 cup chopped fresh basil leaves
